Breakfast Burrito's, Challenges, and more

Breakfast Bean Burrito - from Clean Eating Magazine March 2012 issue.

Ingredients:
  • 1/2 cup brown rice (again I used left over Spanish rice)
  • 2 tsp olive oil, divided
  • 1 large egg plus 6 egg whites
  • 1 yellow onion, diced
  • 1 poblano pepper, seeded and diced
  • 1 yellow squash, diced (such as crookneck squash) (I used a zucchini)
  • 7 1/2 oz BPA-free canned unsalted black beans, drained and rinsed
  • 1 1/2 tsp ground cumin
  • 1/2 tsp sea salt
  • 8 gluten free corn tortillas, warmed
  • 1 lime, cut into 8 wedges, optional
Pico De Gallo
  • 1 cup diced vine-ripe tomatoes
  • 1/2 cup chopped fresh cilantro, plus sprigs for garnish
  • 1/2 tsp sea salt
  • Juice 1 lime
They give you 2 tips:
  1. Try adding a minced jalapeno to the rice mix.
  2. When buying corn tortilla's check the label some brands add wheat flour.
Instructions:

Cook rice according to package; set aside.

Prepare pico de gallo; set aside.

In large nonstick skillet heat 1 tsp oil. Whisk egg & whites in bowl, pour into skillet and cook, stirring occasionally. Transfer to small bowl, cover, and set aside.

In same skillet, heat remaining oil, add onion, poblano, squash and cook. Stirring frequently 4 minutes or until softened. Stir in rice, beans, 1/4 cup water, and cumin. Cook, stirring frequently 1 minute or until heated through. Remove from heat, stir in salt. Top each tortilla with eggs, bean mixture, adn pico de gallo. Garnish with cilanto sprigs and serve with lime wedges.

Calories: 320 per 2!!! Total fat: 6g. Carbs: 53g. Fiber: 9g. Sugars: 4g. Protien: 16g. Sodium: 488mg. Cholesterol: 53mg.

Challenges:

For the month of May the ladies in my workout group are doing a Push-up & No sugar challenge. As you can see I'm failing big time with the sugar area...gotta try harder. As for the push ups I'm on day 8 and 20 push-ups on toes - not knees.

Cindy - a highly inspiring and motivational member of the group posted this about the sugar...dang her! :)

"For those of you that think this may be too hard AND are trying to lose weight, think about all the calories you are saving from giving up foods with sugar. (This is only one aspect of why you shouldn't eat sugary foods). Some of the worse ones are flavored coffees, smoothies with added sugars, candy, baked goods, etc.

I love math and always enjoy doing various math equations. Take this one for example:

1 treat or food/day = 150 calories
Days in the year: 365 days

150 x 365 = 54750 calories.

Divide this number by 3500 (amt of calories it takes to lose a pound)

54750 / 3500 = 15.6 lbs.

Do this simple calculation with the foods you enjoy to see how much weight you are gaining by your indulgence. Is it worth it?"

FYI: I hate math...however, this is a calculation I can read and completely understand...guess I better try a little harder with that sugar I've got 15 pounds to lose by July 4th!

Lastly, the Mad Monk Mud Run is this SUNDAY!!! I'm so excited and so nervous!!! Be ready to see very MUDDY pictures! I may not be around when the camera comes out at HIIT - but my hubby will be going along for this run to photograph us crazy ladies at the Mad Monk!

I see all these challenges on Biggest Loser and I think to myself - look at the fears they are overcoming. No, I do not have a fear of mud or water. Maybe a little bit of heights and a few other things make me rather anxious but I try my best to overcome them and press forward. So I've signed myself up for some crazy things this year...but I am determined to see just what I am made of!
